Pickling and fermentation are two of the oldest food preservation methods. They are a great way to preserve vegetables without using nutrient-destroying heat. The natural, beneficial bacteria that develop the lactic acid environment that preserves the food can contribute to our intestinal health.

Many kinds of foods can be made using fermentation. The most familiar ones are fermented pickles and sauerkraut, but the possibilities are practically unlimited.
